Today is Sunday and at least once a month on this day that means brew day for the EC Rebel Homebrewery. Today’s project is Hasty’s Irish Red. It gets is name from the first time I brewed it and forgot that St. Patrick’s day was only two weeks away. So to get it ready in time I had to put the breaks on fermentation after 4 days, use isinglass fining to rapidly settle the yeast out of solution, and I force carbonated it. …AND IT WORKED. Now I brew it far in advance but the name stuck.
